Now coming into season -- and your local farm stand -- are some of our favorite bitter vegetables: asparagus and radicchio. J'adore these 3 recipes that are super simple but feel so sophisticated -- plus they pair well with just about any meat or fish!
1. You know I love an Ottolenghi recipe! This roasted asparagus with buttered almonds, capers and dill recipe is the perfect side dish during the change of seasons and is just as good cold the next day!
2. Think of this radicchio salad with anchovy vinaigrette as an updated take on a Caesar salad. I even like to kick it up a notch with a freshly grated hard cheese -- like parmesan -- and some roasted hazelnuts, or add a protein and it becomes a complete meal!
Quick tip: soak radicchio in cold water for 20 minutes or so to remove some of the bitterness.
3. Did you know radicchio can also be eaten warm? Jamie Oliver's pear & gorgonzola pasta with radicchio is such a delicious take on the classic trio.
